The proposal...

Last weekend Lil Tony and I had the privilege to photograph and videotape my dear friend's daughter engagement. The week before the big day there were many calls and text messages back and forth with her future SIL trying to figure out the best time and place. He was awesome, nervous, and excited with trying to plan the day and wanting it to be perfect.

The day before he sent a picture telling us where he wanted to propose. The red circle is where they will be standing. We were to hide behind the building with the flag. He was planning out every detail and hoping that she would be surprised!

Lil Tony (who isn't little anymore) and I arrived an hour early to scope out the area and make sure we knew where to stand. I will add a disclaimer that I love photography, but it is a hobby. I am not a professional photographer and the fact that my friends were trusting me with this special moment made me so nervous. We snapped this picture to let him know that we found the location and were ready to go! We sat back and waited for them to arrive!

We thought they would be entering from the right but spotted them approaching from the left. Tony and I hid behind the building almost frozen. With a feeling of nervous anticipation, I peeked around the corner and saw Josh walking Megan towards the spot. Tony and I moved out and started to capture the big day through the lens of the camera.

Crockpot Creamy Italian Chicken

With the change in the weather, we have switched out the grill for the crock-pot. I love using the crockpot. It is nice to know there is a hot cooked meal waiting for us when I get home from work. We have been experimenting with some new recipes, and Creamy Italian Chicken was liked by everyone, a rare occasion in our house! 

Creamy Italian Chicken (crockpot)

6-8 chicken thighs (or 4-5 chicken breasts)
1 can herbed cream of chicken soup
8 oz of cream cheese (diced into 2" squares)
1 tablespoon Italian seasoning
1 tsp minced garlic or 2 garlic cloves (optional)
Salt & Pepper to taste

Spray crock pot with a pan cooking oil. Place chicken in the crockpot. Mix the remaining 5 ingredients in a bowl and then pour over the chicken. Don't worry about the cream cheese being chunky, it will melt as the mixture cooks. Cover with the lid and cook on high for 1 hour and low for 3 hours or on low for 6 hours.

Serve over noodles or rice.

We served it over pappardelle noodles!

I am going to try to be diligent with posting recipes again. Last year I used Blurb and compiled our favorite recipes into a family cookbook. It has been a great go-to cookbook for meal planning.
