There are sometimes when you just have to fake it...

When I am short on time..
this recipe is my go to recipe!

Step 1: Drive to nearest grocery story and look for Betty

Step 2: Drive home

Step 3: Follow the direction on box mix

Step 4: Arrange on a pretty cake plate

Step 5: Smile and say a little thank-you to Betty Crocker!

I have to be honest, Wendy. Ever since I got my KitchenAid mixer, I rarely make cakes from scratch. The few times I have, they just aren't as good as the box kind. The KA whips up the batter -- light, fluffy, tasty ... and in the gas oven it bakes slowly and stays moist. PERFECTION. Oops, now you know. :)

This is my kind of baking! I have a brand of oatmeal cookie mix I swear by, and just to make me feel like I'm actually baking I use my KitchenAid to mix the dry and wet ingredients.

I like the paper you used to line the muffin cups.
